Observed a refrigerated preparation table front of house underneath microwave having an ambient temperature of 52°F measured with mid/max thermometer with TCS food items like sliced tomato's (46°F), sliced ham and turkey (48°F), cheese (46°F), sliced onions (46°F), and butter (47°F). These food times were placed in cooler this morning 2 hours ago per PIC. All Time Temperature Control for Safety (TCS) foods which had been in the unit for less than 4 hours were moved back to the main refrigerator back of house to rapidly cool. PIC will discontinue use of cold holding unit until able to maintain an ambient temperature of 41°F or below. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection

Observed sliced deli (64-78°F) meat and cheese (58°F) cold holding on the counter in a metal tray. Also observed a flat of eggs by the grill (64°F) and packaged bacon (47°F) on the counter. Staff stated all these foods had been out for less than 2 hours. Time Temperature Control for Safety (TCS) foods were all moved into refrigerators at the time of inspection. Discussed the importance of keeping cold holding foods maintained at or below 41°F. Corrective Action: Corrected at time of inspection.

Observed cold holding self-dispensing creamer in the front of the house without date marks. Staff stated that the creamer is filled once to twice per day but the equipment is cleaned every other day. Discussed frequency of cleaning. Equipment must be cleaned every 24 hours if date marking is not used. Discussed requirements with staff. Manager plans to add cleaning the creamer dispensers to nightly closing tasks. Corrective Action: Corrected at time of inspection.
