Observed meatballs hot holding in warming units at 110-120 degrees F. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. Per PIC meatballs had been prepared 30 minutes prior to inspection. PIC warmed meatballs back up to 135 degrees F and turned up hot holding unit. Correct By: Corrected At Time Of Inspection
