Observed the only handwashing sink at the bar area with a strainer and straws/ice blocking the sink basin at the time of inspection. Handwashing sinks shall be maintained so accessible at all times and not used for other purposes than handwashing. PIC relocated all items blocking handwash sink at time of inspection and will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Inspector's notes

Observed coconut cream 50*F and TCS opened cold brew 51*F marked refrigerate after opening in the reach in cooler at the time of inspection in an undercounter refrigeration unit at the bar. Per PIC, TCS products have been in the unit for a few days and unit is typically only used for non TCS foods as it is set to temperatures greater than 41*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

The person in charge (PIC) stated the meat was cooked and cooled on Saturday, 03/22. PIC was informed that all ready to eat (RTE) and temperature/time control for safety (TCS) items that require date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Observed PVC drain pipes for both the circular ice machine along the back of the bar as well as the regular ice machine on the far side of the bar resting within the drain manifold/rim. The PIC was informed that all drain pipes need to rest at least one inch (1in) above the drain manifold/rim to prevent any potential backflow contamination events with food contact surfaces. PIC utilized zip ties to raise the regular ice machine drain pipe to the required height and cut the PVC for the circular ice machine to the required height.
