Person in charge (PIC) washed, rinsed, and sanitized blenders, knives, and spatulas before continuing use. Discussed that food-contact surfaces must be properly sanitized after washing and rinsing. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Corrective Action: Corrected at time of inspection.

The day of preparation shall be counted as Day 1. The PIC stated that the unmarked TCS had been open 2 days ago and were labeled at the time of this inspection. Core-3-304.14, C: Wiping Cloths, Use Limitation Observed the wiping cloth bucket in the coffee bar area that tested at 0ppm for sanitizer. A second wiping cloth bucket contained a soiled cloth and had no sanitizer solution. When stored in solution, the solutions should be reasonably clean and maintained at the proper sanitizer concentration. The PIC had the sanitizer buckets filled with sanitizer at the correct concentration, at the time of this inspection. The dry soiled cloth was no returned to use.
