PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed multiple time temperature controlled items in the cooler that measured 51-55*F with inspector thermometer. Items included milk, cheese, cream, and raw bacon. The ambient temperature of the cooler measured 51*F. Last recorded temperature was around 8am with acceptable temperature. Time of inspection is 2pm. Person in charge placed a service order at time of inspection. Person in charge voluntarily discarded all items at time of inspection. Discussed with person in charge that all time temperature controlled foods should be maintained at 41* F or below when cold holding. All items are documented on embargo form.
