Observed an employee with gloved hands crack raw shelled eggs into the griddle and change to a fresh pair of gloves to handle a RTE bagel without washing their hands first. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed 0pp quat sanitizer in both sanitizer buckets in use on the line and bagel prep area. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations (150-400ppm quat for establishment's sanitizer). Quat dispenser observed functioning properly at the time of inspection. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Person in charge stated they clean the cutting board surface every 24 hours at closing. Observed cutting knives on the cutting board at the cold top being used to cut sandwiches. Person in charge stated they clean the utensils every 24 hours at closing or when needed. Advised person in charge since the utensils are coming into contact with cooked eggs, cheese, and sliced tomatoes that they will need to be cleaned every 4 hours. Person in charge took the utensils to the 3 compartment sink to be washed and brought out new knives. All food-contact surfaces that contact time/temperature control for safety (TCS) foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Measured the concentration of the bucket of sanitizer by the self-serve station with Quat of 0-150ppm. Advised person in charge concentration should be between 150 - 400 ppm when using Quat. Person in charge replaced the sanitizer with a new bucket of sanitizer measuring at a concentration of 200 ppm. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations.
