Inspector's notes

Observed <100ppm quat sanitizer in the 3 comp sink with active warewashing. Per PIC, 5 quat tablets are added to the compartment which slowly drains and is refilled with fresh water. PIC emptied and refilled compartment with hot water and 5 quat tablets. Discussed proper testing methods with PIC. PIC was unable to find test strips and stated the solution was not tested. A small amount of sanitizer was placed in a metal container and cooled to 70*F for accurate testing. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (200ppm for establishment's quat sanitizer). Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.
