No paper towels observed at the back kitchen hand wash sink. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided hand drying provision for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed an ambient air temp in the meat prep cooler at 45*F when measured with a min/max thermometer. Inside the cooler, observed TCS foods measuring 44-55*F, including; ham, turkey, pastrami, roast beef, chicken salad, and tuna salad. Observed the pastrami and roast beef stack above the container line and fill line with temperatures above the fill line measuring 52-55*F. Foods held below the fill line were observed holding at 44-51*F. PIC stated the foods were observed holding at 41*F or below through lunch. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Advised PIC to store only non-TCS foods in the prep cooler until repair are made. Corrective Action: Corrected at time of inspection.

In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. Observed discolored and heavily scored plastic cutting boards in use throughout the establishment. Per PIC, the cutting boards are replaced yearly. Advised PIC to replace as needed to maintain the surface smooth and easily cleanable without deep scoring. Discussed scoring may provide harborage conditions for bacterial growth. Advised PIC to regular warewashing should be sufficient to clean the surface. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Repair, replace or resurface cutting surfaces prior to the next routine inspection. Corrective Action: Correct prior to next routine inspection.
