Inspector's notes

Observed 50+ fruit flies surrounding the mop sink, 3 comp sink and soda machine areas. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. PIC stated they cleaned throughout the establishment and provided pest control receipts. Observed sections of the wall where flies were attracted to a sticky residue. Per PIC, they are spraying wall with apple cider vinegar to eliminate flies. Advised PIC apple cider vinegar is a food source and attractant for fruit flies. Discontinue this practice and clean walls to remove residue. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Corrective Action: Correct prior to re-inspection.

Observed blanched potatoes measuring 68*F and spanakopita containing cheese and spinach with internal temperatures at 78*F the PIC stated was on time as a control but no timestamp or log was provided. PIC stated the foods were prepared approximately 2 hours prior. All TCS foods being held under time as a control were properly time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Observed 0ppm chlorine sanitizer from the low temp chemical dishwasher after priming and running multiple times. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (50-100ppm chlorine sanitizer). PIC moved the dishes to the 3 comp sink to be propely sanitized. Corrective Action: Corrected at time of inspection.
