Tomato basil soup-47-48F cooling in a large deep container. PIC stated that the soup had been made and placed into the walk in to cool the previous day and discarded-see embargo form. *(Establishment had three containers of the soup cooling the previous day. Two of the containers were in shallow pans and the soup in the shallow pans was 38F.) Ensure that PHF/TCS foods are cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F or less. Corrective Action: Corrected at time of inspection.

Opened package of franks and cooked quinoa with no date marks in the reach in/make line cooler. PIC stated that all items were opened within the last five days and provided date marks. PHF/TCS food should be clearly marked to indicate the date the food shall be consumed or discarded when held at a temperature of 41°F or less for a maximum of 7 days. Inspector's notes
Observed an employee's phone and beverage with a lid and straw stored in a bowl and another container above clean dishes, on the clean equipment rack across from the dish machine. According to PIC, the bowl and container are not used. Employee relocated the items to prevent contamination of food and food contact surfaces and put the bowl and container in the dish area to be cleaned. Because employees could introduce pathogens to food by hand-to-mouth-to-food contact and because street clothing and personal belongings carry contaminants, areas designated to accommodate employees' personal needs must be carefully located. Food, food equipment and utensils, clean linens, and single-service and single-use articles must not be in jeopardy of contamination from these areas. Corrective Action: Corrected at time of inspection.

Observed multiple tcs foods inside main sandwich line unit in temperature danger zone (41*F-135*F); Inside the unit on top rail on double pan stacked was large potato salad at 50*F; shredded cheddar cheese inside bottom of unit at 50*F; mozzarella cheese at 50*F; cut tomatoes at 50*F. Notified Person In Charge (PIC). PIC stated all items were inside the unit prior to today. Directed PIC to place all listed tcs foods to be moved to main walk in unit to cool to 41*F. Verified after 1hr. Ambient temperature of the unit was at 38*F with min/max thermometer. =====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
