Inspector's notes
Observed hard boiled eggs, yogurt, and milk at 50F in self-service refrigerator/43F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The refrigerator was observed with frost buildup on back panel. Per staff, the foods were observed at proper temperature prior to service and were within safe time holding parameters. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. PIC scheduled repair service for the unit. Discussed other options for maintaining temperature control. Corrective Action: Corrected at time of inspection.

Inspector's notes
In the sanitizer bucket, observed quaternary ammonium concentration over 500ppm, and food service worker was unaware of the concentration being too strong. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. The PIC indicated that repair service had been already scheduled. Sanitizer was diluted to approved levels at time of inspection. Ensure staff are trained as needed. Corrective Action: Corrected at time of inspection.
