Per PIC, the milk and cream were in the cooler less than 4 hours prior to inspection. PIC voluntarily discarded all open cow and alternative milk products. All TCS food must be maintained at 41°F or less, at all times. Correct By: Corrected At Time Of Inspection

PIC discovered the unit had been unplugged. After plugging in the unit and waiting 20 minutes, the unit was able to maintain proper cold holding temperature. Equipment used for cold holding must be able to have the capacity to properly maintain all TCS food at 41F or below. Correct By: Corrected At Time Of Inspection
