Observed large chub of deli turkey cold holding at internal temperature of 46-47 deg F in the top shelf of the lighted deli display case. Deli manager informed the deli turkey chub had been in unit since the night prior and removed from retail sale. Observed packages of deli ham cold holding in over filled sandwich preparation station at internal temperature of 47 deg F. Deli manager informed they had been in preparation station a short time prior and placed in walk in unit. Second consecutive violation. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed deli slicer on food prep counter with accumulation of food debris on food contact surface portions of slicer. Per PIC, the deli slicer was used the day of the inspection; but the slicer hasn't been cleaned since the morning (8AM). PIC had employee washed, rinsed, and sanitized the deli slicer at the time of inspection. Discussed cleaning frequency of food contact surfaces with the PIC. Discussed the importance of storing all food contact surfaces clean. Food contact surfaces must be cleaned every 4 hours when in use and must be stored clean. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed rice, beans, mac and cheese, mash potatoes, and burritos with an internal temperature range of 110F-120F in the hot display case. Per the PIC and the logs, the food items were in the display case for less than 2 hours. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
