Observed 3 cooked vegetable and rice dishes on the mobile pan rack shelving unit within walk-in cooler in the culinary arts room with accumulated organic matter. All adulterated food was discarded at time of inspection and all dishes were washed and sanitized. All food must be in good condition, safe, and unadulterated. Observed accumulation of food residue and debris on hot holding unit next to microwave near baking prep area, and on the stove top in the back area within culinary arts kitchen. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Corrective Action: Correct prior to next routine inspection.
