Observed 4 canisters of whipped cream holding 51-60F. Per PIC, the whipped cream was made at 12pm the previous day. The whipped cream was discarded. Core-3-304.14, C: Wiping Cloths, Use Limitation Observed wiping cloths stored in buckets of 50ppm quat solution. It was determined that the sanitizer coming out of the 3 compartment sink was not dispensing enough solution. PIC opened the container of sanitizer and manually poured its contents into each cloth bucket to reach 300ppm. Please continue to do so until further maintenance.
