Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

No County Legal Action. Provided in person redacted copy of citizens complaint to the establishment. Reviewed and observed all areas of the kitchen. Complaint is validated. Violations #18 3-501.14, P Cooling. Two full containers of cooked breakfast burritos at 46*F-48*F from 7:58am; time is 1:15pm. TCS food prepared from ingredients at ambient temperature shall be cooled within 4 hours to 41°F or less. Also observed bag of hash browns open in non-operational reach in unit. Internal temperature of hash browns made with milk is 66.6*F Violation #20 3-501.16(A)(2) and (B), :Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Breakfast ends at 10:30am. Time of inspection is 1:15pm. Product is usually kept frozen. Not able to contact complainant via email provided. Will close out citizens complaint.
