Inspector's notes

Observed a pan of macaroni and cheese at 117 Deg. F. in the holt holding case. Per operator it was placed in the unit to reheat approximately 1.5 hours prior. Spoke to operator regarding not using this unit to reheat products and only to holt hold Time Temperature Control for Safety Foods (TCS). All ready-to-eat TCS foods that were previously prepared or opened must be reheated to 165 Deg. F. either in the oven or the microwave prior to hot holding. The pan was reheated at the time of inspection.
