Inspector's notes

The fried egg was at 45°F, cooling in the standing reach in the cooler, covered with plastic wrap. The eggs were moved to the walk-in to complete the cooling process. The reach in cooler was noted with an air temperature below 40°F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

The concentration of quat in the 3-compartment sink was below 150ppm. The dispenser was not properly dispensing the quat sanitizer. We discussed adding sanitizer and testing to ensure it is at the proper concentration. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Correct prior to re-inspection on 9/13/24.

To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so.
