Inspector's notes
Observed an in-use ice machine with black, slimy, organic-like material growing behind the deflector panel. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse. Correct by next routine inspection.

Inspector's notes
Observed Quat sanitizer being used to sanitize surfaces. When asked for test strips, PIC provided a soaked roll of test strips that was dyed blue indicating the roll had fallen into a basin of sanitizer. Per PIC they did not have any alternative test strips to test sanitizer. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. Correct prior to re-inspection on 9/27/24.
