Observed TCS food being held in a refrigerated walk-in unit with an internal temperature of 48-51*F. Internal temperature registered with an internal probe thermometer. Ambient temperature of unit registered 56*F with a min/max thermometer. TCS food items included cut deli meats, cheeses, cut leafy greens, and dairy products. Per PIC all TCS food have been in unit for greater than 4hrs at time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.

Observed dried food debris along the back end of the deli slicer blade. Per PIC the slicer had not been used by time of inspection and was supposed to have been cleaned by the closer. All food-contact surfaces must be cleaned to sight and touch. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrected at time of inspection.

Observed TCS food items being held on mainline cold holding unit, internal temperature of items ranged from 58*-65*F. Internal temperatures of TCS foods taken with internal probe thermometer. TCS foods include: cut deli meats, cut leafy greens, sliced cheeses, sliced tomatoes, chicken and tuna salads. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrected at time of inspection.

TCS foods internal temperature taken with probe thermometer registered 58-65*F. Ambient temperature of unit taken with min/max thermometer registered 63*F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Correct prior to 10-day re-inspection on 8/6/24.

Someone has applied foam material to the floor sink and cabinet surrounding the floor sink beneath the self-service soda fountain. This foam cannot be cleaned and black organic material is accumulating in the area because water will not drain completely. The foam must be removed from the floor sink and cabinet and each of these must be thoroughly cleaned. 2. There is a space between the back of the walk-in refrigerator and the wall, above the left side of the three compartment sink, where trim previously covering the space has been removed.
