Observed sliced America Cheese being cooled with lids tightly sealed and stacked inside the reach in cooler at cook line. PIC relocated the cheese to walk-in cooler and left lids slightly ajar to facilitate rapid cooling. Corrective Action: Corrected at time of inspection.
