Observed an in-use soda gun dispenser at the bar with excessive syrup accumulation. Educated PIC that the soda dispenser is food contact surface and all food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrected at time of inspection.

PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. Soup with internal temperature between 89 degrees F and 115 degrees F hot holding in the steam table on the cookline. Spoke with PIC and soup was reheated approximately 1 hour prior to inspectors arrival. Temperature was verified by PIC at 165 degrees F for reheating the soup. PIC will reheat soup to 165 degrees F and then hot hold at 135 degrees F or above. Recommended placing empty pans in the steam well instead of leaving an open space so that all heat stays in to maintain correct temperature. All hot holding food items must be held at 135 degrees F or above. Correct By: Corrected At Time Of Inspection

The floor sink for the three compartment sink and prep sink overflows when one of the compartments of these sinks is emptied. Clear the drainage system so that the floor sinks do not overflow when the sink compartments are emptied.2. The condensate from the walk-in refrigerator drains into a hole in the wall behind the water heater. This drain pipe must be rerouted to drain into a floor sink with a minimum 1 in. air-gap between the end of the drain pipe and the flood rim of the floor sink. Repair the hole in the wall and properly seal any sewer pipes in this area.3. Provide a certified, drinking water safe, RPZ backflow prevention device for the water supply line to the soda fountain carbonator. All piping and fittings on the downstream side of this device must be plastic or stainless steel, no copper or brass.4. Provide new hose bib vacuum breakers for the hot and cold water faucets at the outside mop sink.5. Repair the mechanical dishwasher so that it sanitizes properly with 50-100 PPM chlorine.6. Provide smooth, washable ceiling tiles above the hand sink and soda fountain and soda box room as discussed.7. Thoroughly clean the floors and floor sinks throughout the kitchen.8. Finish installing all cooking equipment under the hood.9. Ensure that all refrigerated food equipment is running and able to maintain foods at 41°F or less.10. Provide a cove base finish at the floor/wall junctures in the front areas where missing and in the restrooms.11. Clean the exhaust hood replace the missing baffle beneath the cooking hood.12. Replace all missing lights in the walk-in freezer and underneath the hood where necessary.13. Thoroughly clean beneath the sinks and dishwasher in the kitchen.14. Provide a waterproof finish for the bare wood on the bar top and caulk and seal the space between the underside of the bar top and the supporting wall underneath.
