Observed Sushi (California rolls) cold holding at internal temperature of 49-51 deg F in a reach in case. The sushi was cold holding in card board containers overfilled at front of cold case. Coach informed the sushi had been cold holding in reach in case since the night prior and removed from shelving to discard. Embargo form was filled out. All TCS food held cold must maintain <41 deg F at all times. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff which resulted in the violation. Correct By: Corrected At Time Of Inspection
