Observed various shapes of cooling pasta with internal temperatures ranging from 46-58*F in the walk in cooler and 58-60*F in the prep cooler. Observed all pasta wrapped tightly in plastic bags and stacked in the walk in cooler. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked broccoli and mushrooms held in paper portion cups stored above the fill line of the pans in the prep cooler next to the microwaves with internal temperatures ranging from 48-55*F. All other foods held under the fill line were observed at 41*F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Final construction inspection for a Class 3 10+ E&D permit was conducted with Derek B. by appointment. The establishment was closed and not operating at time of inspection. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Also, checks and money orders are accepted via US Mail. Please ensure the following items are addressed by the final construction inspection: 1) Provide an ASSE 1013 reduced pressure backflow preventer upstream of the pasta cooker. Certify and provide a test report. 2) Ensure ASSE 1022 dual checks are installed on all water supply lines connected to non-carbonated beverage equipment. 3) Caulk-in all escutcheon plates and plumbing penetrations throughout the facility. 4) Caulk-in all wall holes, as needed, with silicone. 5) Ensure all sink fixtures are caulked to the walls, as needed. 6) Regrout the tile flooring near the back exterior door. 7) Provide a 3/8th inch minimum tool or finger cove to the restroom top set cove tile, as needed. Utilize silicone grout. The final is scheduled for Monday December 4th, 2023. At the final construction inspection, ensure hot water measuring 120' F minimum is provided to the plumbing system and all refrigerators are on and measuring at 41' F or below.
