Instructed PIC that all food contact surfaces must be washed, rinsed and when using quat ammonia as a sanitizer, that the equipment/utensils/cups must be in contact with the quat ammonia sanitizer for 1 minute before putting away to air dry. Had employee re-wash, rinse and sanitizer dishes at time of inspection. When using this type of quat ammonia, the dishes must have a contact time with the solution for 1 minute.
