Observed shake mix at 51*F in the shake machine. Person in charge stated the shake mix was placed in the machine at approximatley 8:00am from the walk-in cooler, time of inspection was approximately 11:00am. Corrective Action: Corrected at time of inspection.

Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
