Observed containers of TCS Mayonnaise and tartar sauce on the counter measuring at 75 degrees F. Per PIC they leave them out on the counter for up to hours and discard the next day. At time of inspection, the containers had been out for approximately 5 hours and were recommended for discard. Discussed cold holding and time as control.

Observed small prep refrigerator that stores coleslaw and other TCS foods, not in good repair. There is approximately a one-inch gap preventing the door from closing all the way. Instructed staff to remove food from the refrigerator at closing each night until in good repair and monitor food temperatures closely. Food temperatures were 41 degrees F at time of inspection. Prep refrigerator must be repaired
