Inspector's notes

Cooler drawers underneath cooking equipment had the following TCS foods measuring an internal temperature of 50-53'F: raw chicken, raw steak, fries, stuffed peppers, half peppers with tuna, and disks of imitation crab mix. Items had been in cooler <4 hours. Ambient air temperature of refrigeration unit measured 54.8'F with min/max thermometer. Adequate refrigeration nearby. Person in charge moved all items out of cooler drawers and into other working refrigeration. Do not hold any TCS foods in cooler until it is able to hold foods at an internal temperature of 41'F or lower. Corrective Action: Corrected at time of inspection.
