Observed reach-in cooler doors not staying closed properly causing cooler to slowly return to 41°F after being opened for cleaning/stocking. Also observed ice build up on fan unit. Discussed clearing top shelf in cooler to allow for cold air to circulate until unit has been serviced to remove ice build up and repair door seals. Manager has placed a work order and service company is waiting for parts. Corrective Action: Correct prior to next routine inspection.

The Person in Charge (PIC) stated the chicken had been here for less than 1 hour and was intended to be held here all day, monitored by hot holding. The chicken was reheated on the grill to 165°F before being placed in the steamtable. Discussed raising steam table temperature settings and holding less chicken at a time. PIC stated they are considering moving to Time as Public Health Control to monitor chicken. Provided guidance documents for Time as Public Health Control and discussed policies to put in place if deciding to implement this practice.
