Observed cartons of raw liquid eggs stored directly above ready-to-eat fruits such as strawberries and pineapple inside of the walk-in cooler. Person in charge relocated the cartons of raw eggs according to their final cooking temperature. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed thick, black organic matter on the inside of the ice machine. Person in charge will remove the ice and thoroughly clean out the inside of the ice machine. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Observed no sanitizer testing strips available for the chlorine-sanitizing dishwasher in the kitchen or the chlorine-sanitizing dish washer at the bar. Inspector used personal test strips to verify that sanitizers were at the appropriate concentration and test strips indicated that the sanitizers were within the correct range of 50-100 parts per million for the chlorine sanitizer. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. A re-inspection will occur within 10 days or no later than September 4th, 2025. Corrective Action: Correct prior to re-inspection.
