Observed employee with artificial nails use bare hands several times during the inspection to scoop fries. Employees with artificial/painted nails must wear gloves when working with exposed RTE foods. Employee washed hands and donned gloves at time of inspection. Discussed the establishment's policy for glove usage when handling exposed food. According to PIC, employees must don gloves while working with open food. PIC will retrain employees in order to prevent food contamination. Corrective Action: Corrected at time of inspection.

PIC uncovered the burritos and placed into the walk-in freezer to rapidly cool to 41F or less. Reviewed the procedure for prepping and cooling the burritos. PIC will review cooling methods with prep employee to ensure cooling to 41F in 4 hours or less.
