Inspector's notes

Observed cooked chicken katsu stored in fryer basket with an internal temperature range of 90F-130. Per PIC, the chicken katsu is cooked in the fryer, left in the basket to let the oil drain for a few minutes, and then moved to the steamer to hot hold. The PIC is was not sure how long the chicken katsu was out of temperature control. All TCS foods improperly hot held were discarded by PIC at time of inspection. Recommended possibly creating a time control policy for the chicken katsu. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed mac salad (cooked pasta, mayo, carrots) on the cook line in water/ice bath with an internal temperature range of 50F-55F. Per PIC, the mac salad has been out for over 4 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Recommendation creating a time control policy for the mac salad, or placing the mac salad in small containers so that the containers can be fully submerged in the water/ice bath.
