Inspector's notes

Observed multiple dishes, and a scoop sitting in the basin of the hand wash sink near the 3 compartment sink. PIC was busy with a customer and stated that the inspector could remove the items from the sink. A handwashing sink must be maintained so that it is always accessible for employee use and may not be used for purposes other than handwashing. Corrective Action: Corrected at time of inspection.

#16 — Food-Contact Surfaces: Cleaned and SanitizedPriority4-703.11

Inspector's notes

At time of inspection, observed employee cleaning blender containers at 3 compartment sink by washing and rinsing equipment then dipping the equipment for 2 seconds in a chlorine sanitizer before placing the container on the side of the 3 compartment sink to dry. Instructed PIC that all food contact surfaces must be washed, rinsed and when using chlorine as a sanitizer, that the equipment must be in contact with the chlorine sanitizer for 10 seconds before putting away to air dry. Had employee re-wash, rinse and sanitizer dishes at time of inspection. When using a chlorine solution, the food contact surface must have a contact time with the solution for 10 seconds. Corrective Action: Corrected at time of inspection.
