Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Predefined Comment: Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

At the hot buffet line observed a large piece of clear plastic mixed into the cooked Vegan Fried Rice. After discussion with the person in charge it was determined the piece of plastic likely came from the packaging the product was packaged in. Discussed monitoring food at all times to ensure no foreign object/substance is present in the food that can contaminate food or be consumed. The Vegan Fried Rice was discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Observed roasted turkey breast on the upper two levels of the deli display cooler closest to the bakery with internal temperatures between 47-50°F. Except during preparation, cooking, cooling, or when time is used as a control all TCS food shall be maintained at 41°F or less. After discussion with staff, it was determined the turkey was within safe time parameters. The turkey was moved to the walk-in coolers to rapidly cool at time of inspection. Temperature in the upper two levels of the deli display measured at 50.1°F with min/max thermometer. Service call made at time of inspection by the person in charge. Discontinue use of malfunctioning section of the deli display for TCS foods until the unit maintains 41°F or less. Correct By: Corrected At Time Of Inspection
