For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. Observed several pans of blanched fries cooling, by the ice machine, at room temperature. The fries measured between 75-95°F and had been placed at room temperature to cool approximately 3.5 hour prior. Manager was unable to provide cooling times or temperatures of the fries. Staff moved blanched fries to the walk in cooler, at time of inspection. Temperature control (refrigeration) must be applied after fries cool to 135°F. Time Temperature Control for Safety (TCS) foods must cool from 135°F to 70°F within 2 hours and from 135°F and 41°F or less within a total of 6 hours. Reviewed cooling parameters :

Observed blanched fries that were made approximately 4 hours ago. Internal temperature was 60 degrees F. The containers lid was on it. Recommended not placing the lids on the fries until the internal temperature reaches 41 degrees to ensure cooling is complete in adequate time. The lids were removed for rapid cooling.
