Of note: Establishment has roof work currently undergoing. Work order to repair ceiling above hood vent. Work order to replace missing ice maker cover and turbo air unit vent cover. Reminder: homestyle freezer like magic chef are not permitted inside kitchen. Only commercial grade NSF or equivalent freezer are permitted.Establishment may be undergoing ownership changes in near future. Items included raw shrimp, cooked Mexican rice, cooked beans, and cooked salsas. Person in charge (PIC) stated that she raised temperature for unit 2 hours prior because foods were freezing. Discussed with PIC that cold TCS items must be held at 41*F and below at all times. PIC lowered temperature of cold holding unit and items were observed dropping in temperature at end of inspection.
