Observed inside left large hot holding unit with large amount of cooked carne asada beef in container. Internal temperature was 112*F-129*F with inspector and establishment thermometers. Notified Person In Charge (PIC). PIC confirmed internal temperature. Observed that unit for heat element was not turned on. PIC turned on unit. Per employee the carne asada was prepared around 11am. Time of inspection is at 12:45pm; directed PIC to heat above 165*F to hot hold. =============== Corrective Action: Corrected at time of inspection.

Open chips, open salsas, and open chicharrones without utensils were left out for customer self-service. Food samples must be kept covered and utensils must be provided. Salsas must be kept cold at 41F or colder. The manager then removed the food items from customer self-service. Corrective Action: Corrected at time of inspection.
