#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed a deli walk-in unit being actively serviced while still containing TCS food items with an internal temperature of 49-51*F. Internal temperature of TCS food item registered with an internal probe thermometer. After discussing with PIC and maintenance staff, the fan was turned off an hour prior to time of inspection for maintenance on the unit, without relocating the food. TCS food items included: whole deli meat rounds, cheeses, pre-cooked meats, and cut leafy greens. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.

Inspector's notes

Observed open top cold holding unit with cold rotisserie chicken individually packaged in plastic bags. Internal temperature of chickens taken with internal probe thermometer registered 44*F-50*F. Per PIC chicken were fully cooked two days before, cooled in the walk-in refrigeration unit, and placed in the open top cold holding unit 24hrs previously. Educated PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrected at time of inspection.
