Inspector's notes
Observed an employee changing the time stamps of TCS food items being held under Time as a Control (TAC) instead of discarding the food. Observed TCS food being staged for TAC under the prep line with the intent of being placed under TAC 4hrs after time of inspection. When asked, PIC stated the intent of for the staged food was "to get to room temperature before being placed under TAC". Educated PIC that TCS food being placed under TAC must first be held at 41*F or less and TAC begins when removed from holding temperature. All TCS food items that were past 4hrs were discarded at time of inspection, and replaced with food held at temperature from the walk-in. All TCS food items being staged were relocated to walk-in to facilitate rapid cooling. All TCS foods being held under time as a control were properly time stamped at time of inspection. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. >>>>> Observed four trays of cut lettuce, 1 tray of cut cheese, 1 tray of cut tomatoes, and 1 tray of cut onions under prep line. Internal temperature was taken with probe thermometer, temperatures ranged from 61*F-70*F. Per PIC food was intended to be kept under time as a control for the afternoon lunch rush. Employee stated food was removed from walk in and prepped at 7:30am, food had been out for under 2hrs at time of inspection. Per date marking on trays, food was to be discarded by 2pm as per procedure. Food was removed from prep line and placed in walk-in refrigeration unit to facilitate rapid cooling below 41*F. Educated PIC that in order to utilize time as a control, food must first begin above 135*F for hot food or below 41*F for cold food. Correct By: Corrected At Time Of Inspection

All outflow hoses must be at least 1" above floor drain to prevent sewage backing up into unit. PIC stated they will cut the hose and raise it after closing.
