#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS food with an internal temp of 48-50*F inside a reach-in refrigeration unit on the line. Internal temperature of TCS food registered with an internal probe thermometer. Ambient temperature of unit registered 49-51*F with min/max thermometer. PIC stated all food inside of unit were placed in unit greater than 4hrs prior to time of inspection. TCS food items included cut deli meats, cut leafy greens, sliced cheeses, and sliced tomatoes. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed PIC that no food can be placed inside the unit until ambient temperature maintains 41*F or below. Corrected at time of inspection.
