Observed salami at 50*F, sliced tomatoes 53*F, soft cheeses in sandwich prep cooler across from soda fountain. Cold hold food to be 41*F or lower. As per the person in cd been placed in the prep cooler today. Advised staff to check food temperatures after service rushed to verify food is remaining at 41*F, Tomatoes, salami and soft cheeses were embargoed and discarded. Corrective Action: Corrected at time of inspection.

Observed three door sandwich/salad prep refrigerator at 53*F using a max/min thermometer. Equipment must be maintained at a temperature that keeps food at 41*F or lower. Advised person n charge to use metal stem thermometers to verify cold hold temperatures. Person in charge placed work order for repair and is placing food on ice to keep at 41*F. Recommend checking food temperatures at most every 4 hours. May choose to use time as control for tcs foods at this refrigerator. Corrective Action: Correct prior to re-inspection. Reinspection to be completed on or before May 1, 2026

Refrigeration unit in pizza area had the following TCS foods measuring an internal temperature ranging from 47-62'F: pepperoni, raw italian sausage, sausage, chicken sausage, diced chicken, ricotta, sliced & diced tomato, pizza sauce, sun dried tomato, pesto, artichokes, olives, and spinach. Per person in charge all food had been brought from walk-in cooler at beginning of day and temperatures in cooler had been verified <4 hours prior. Person in in charge had employees begin moving all items in bottom of cooler to walk-in cooler and will have items in top portion placed on ice. Ambient temperature of cooler measured 60'F with min/max thermometer. TCS foods shall be held at 41'F or lower when cold holding. Corrective Action: Corrected at time of inspection.

Sanitizer bucket near salad station measured a quat sanitizer concentration <150ppm. Person in charge took sanitizer bucket back to dispenser to remake and verify sanitizer concentration. Quat sanitizer coming out of dispenser measured <150ppm. Bottle of quat sanitizer was low and establishment did not have an extra bottle on premises. Person in charge will ensure that all equipment is run through dishwasher until quat sanitizer at 3-compartment tests at 150-400ppm. Corrective Action: Correct prior to next routine inspection.
