Inspector's notes

Observed garbonzo beans being cooled in walk in cooled in 8 inch pan at 85*F. As per the person in charge the items had started to be prepared at approximately 10:40am. The beans were placed in the walk in cooler less than 2 hours prior to the inspection starting. Staff stirred product and replaced in walk in cooler. Advised staff to stir often to assist in cooling or place in shallow pans no deeper than 2 inches. Food is to be cooled from 135*F - 70*F within two hours and then 70*F - 41*F in an additional 4 hours. Provided charts to assist in cooling process. Corrective Action: Corrected at time of inspection.
