Prior to next routine inspection, have backflow device serviced by a plumber or backflow specialist to ensure backflow device is in good repair. Operator stated that their high temp dishwasher was having issues reaching sanitizing temps and was measured to be operating at 155'F. Technicians arrived on site to address the issue while inspection was being conducted. PIC will discontinue use of dish machine until repairs are made. No active dishwashing occurring at time of inspection. Also discussed sanitizer requirements with PIC.

Establishment had fresh pico and diced tomatoes on the make table with temperatures ranging from 45-52'F. Per label (and cook), the pico was prepped 3 hours prior and immediately placed into make table. Manager moved pico and tomatoes to freezer and placed on a sheet pan to rapidly cool to 41'F. Observed one of the cooks smashing down the raw burgers onto the grill, removing the parchment paper on the burgers with his gloved hands and then reaching to grab a bun. Employee was stopped by inspector, asked to remove gloves, and then go wash hands before handing the buns. Employee properly washed hands. The woman washing dishes loaded up a few racks of dirty dishes with her dishwashing gloves on and then immediately started putting away clean gloves without washing her hands. This employee was also asked to remove her gloves, wash hands, and rewash the dishes she had touched. Reviewed "when to wash hands" with manager. Corrective Action: Corrected at time of inspection.
