The person in charge stated the kolaches had been prepped and placed on the racks around 1pm, approximately 2 hours ago. The person in charge then moved the sausage kolaches into the reach in freezer for rapid cooling. Observed a small container of milk at ambient with internal temperature of 71F next to the coffee machine. The person in charge stated the milk is used for coffee drinks when requested and was uncertain how long it had been in the container at ambient temperature. The person in charge discarded the milk at the time of inspection.

Discussed limiting the number of wiping cloths kept in the sanitizer buck, frequency of changing the sanitizing solution, and appropriate ppm chlorine concentration.
