Observed new Frymaster hot holding unit being utilized to hold food using time as a control. Observed employees turn off alarm to discard chicken patties on shelving, but not discard food. Freshly cooked burgers and fish patties placed on shelving without resetting timers. Spicy chicken patties with an internal temperature of 116-130*F without timers set. Manager unable to provide training documents, policy, or manual for new equipment and processes. Manager had employees discard food and will closely monitor employee usage of unit to ensure proper time control. General manager to provide policy, training documents, and manual for unit prior to re-inspection by 2/6/2025.
