Cooked ground beef item-72F in an electric skillet on the prep counter. PIC stated that the beef had been cooked about thirty minutes prior and relocated to the oven to reheat. Ensure that TCS food items are maintained at 135F or above when hot holding. Corrective Action: Corrected at time of inspection.
