Milk, butter, yogurt with an internal temperature of 45-46*F. Person in charge mentioned foods had an internal temperature of 41*F within 2hrs prior to inspection. All cold temperature-controlled foods should be held at 41*F or below. Person in charge placed foods in walk-in. Foods reached an internal temperature of 41*F within 1hr and 15min. Recommended checking ambient temperature of units prior to use. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Observed several items prepared within 2 hours of inspection, with an internal temperature ranging 50-66*F (chicken salad, tuna salad, shredded cheese, fruit salads). Foods were stored in 6-inch plastic containers tightly sealed. Person in charge had employees remove lids and transfer to 2 and 4 inch containers. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. NO paper towels supplied at the hand washing sink at the dish room. PIC called EVS and the paper towel dispenser was stocked at time of inspection. Hand drying towels must always be available at all hand washing sinks. Residual moisture on the hands can increase the level of touch-contact associated bacterial transfer following handwashing. Observed sliced ham, sliced roast beef, pasta salad and tuna being cooled with lids on inside the reach-in coolers in the pantry area. All products were within proper cooling parameters. All products were relocated to walk-in cooler where they were stored with lids slightly ajar to facilitate rapid cooing. Discussed importance of air circulation during the cooling process. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.

The dish machine was incompliance, test strips were readily available, and there is a handwashing sink within 10ft from the dish machine. Per PIC, main dish machine/drain line repair is to be completed in roughly 3 weeks. Once repairs are done, the temporary dish machine will be removed.No County legal action will result from this inspection.
