Inspector's notes

In the small reach in refrigerator below the espresso machine observed half gallon containers of heavy cream/50°F and milk/49°F. In the open top section of the prep refrigerator observed roasted garlic/49°F. In a melted ice bath at the bar observed blue cheese olives/ 60°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge, it was determined the blue cheese olives and roasted garlic were set up around 11AM. After discussion with the person in charge, it was determined the heavy cream and milks had been in the refrigerator all morning. The blue cheese olives and roasted garlic were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. The heavy cream and milks improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

After discussion with the person in charge it was determined the pasta and asparagus had been cooling for about an hour. Predefined Comment: All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed 6in deep full size hotel pan in walk-in with cheese sauce cooling. With inspector probe thermometer the sauce measured 100*F. The label stated that the product was made approximately 2 hours prior to inspection. Chef had staff reheat product back to 165*F at time of inspection, then rebegin the cooling process. Discussed with the person in charge that acceptable cooling methods include: Placing food in shallow pans, separating the food into smaller or thinner portions, using rapid cooling equipment (i.e. a blast chiller), stirring the food in a container placed in an ice water bath, using containers that facilitate heat transfer, or adding ice as an ingredient. Corrective Action: Corrected at time of inspection.
