Observed employee drop pieces of baked bread on the floor then pick them up and place them on the prep table where employee was actively working kneading dough. Discussed discarding food that may have been contaminated and protecting food prep area/food equipment from contamination. Employee discarded the bread at the time of inspection and sanitized prep table. Corrective Action: Corrected at time of inspection.

Observed second designated handwashing sink by the 3 compartment (closest to bakery area) with excessive amounts of food debris and a drain plug at time of inspection. Person in charge (PIC) states they sometimes use the sink for thawing/food prep. Explained to PIC that the second handwashing sink has been designated for pure handwashing only. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Corrective Action: Corrected at time of inspection.
