Observed whole milk, lunchables, american cheese, hot smoked sausage, hot dogs, bologna, cheddar cheese, pepper jack, cream chese, mozarella cheese, hickory smoked ham with an internal temperature of 43-47*F in upright reach-in coolers. PIC was instructed to move items to walk-in cooler to rapidly chill.

Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Observed upright reach-in cooler holding ambient air temperature of 44-46*f Throughout various parts of cooler using min max thermometer. Internal thermometer was registering at 50*f at time of inspection. Please make repairs prior to 8.22.25.
